Satisfy your sweet tooth with the latest dessert creation to make its way to the Bay Area: cubed ice cream coated in torched marshmallow on a stick.
This popular Korean street food can now be found in Sunnyvale at Coco S’more, which soft opened June 28 out of the same location that houses Taiwanese breakfast spot Xiaoman Riceburrito. Prepaid reservations are required during the soft opening phase, and the experience comes with a vanilla ice cream s’more, your choice of toppings (chocolate sauce, rainbow sprinkles, and/or graham cracker pieces), and a chocolate milk slushy with toasted marshmallow. After the grand opening, which is expected in August, Coco S’more will be open for walk-ins and offer multiple ice cream flavors.
“I am a foodie, and I love s’more, and I love ice cream, and I like everything that can make people happy,” owner Mina Hsieh said. “I also like to share with the people who I love or my friends. Every time, when I cook something new or I try something new, I always want to share and make the people happy.”
Hsieh’s inspiration for Coco S’more is from a distant memory of visiting San Francisco at 5 years old.
“It was during the trip that I encountered a unique, delightful sweet scent,” she said. “It’s the first impression of America … But this memory is too young to remember where the scent came from. Years later, I realized it was from a s’more.”
Hsieh grew up in Taiwan, immigrating to the United States when she was 28 years old. She was in the nursing field for nearly 17 years before deciding she wanted a career change. In 2020, she opened Xiaoman Riceburrito in Sunnyvale.
“Now I was thinking, I want to share my passion for food and sweetness to more people, so I created another brand,” she said.
Coco S’more utilizes Xiaoman Riceburrito’s space after the breakfast spot closes at 1:30 p.m., transforming into Coco S’more at 3 p.m.
“My goal is for Coco S’more to be more than just a treat,” Hsieh said. “It’s a medium for creating and recalling joyful moments together.”
